I would like the assigned LETTER to show in gradebook - mine and learner's - rather than be required to use a percentage only.

Thank you for sharing your Feature Idea!
I wanted to make sure that you are aware that while you currently can't remove percentages from displaying for the instructor in the Gradebook, you can force Schoology to only show letter grades to students along with parents.
When you create a scale with letter grades in the Grade Setup area of your course, make sure the box: Only show letter grade is checked. Students will only see the letter grade while you, as the Instructor, will be able to select from the scale. Make sure you have associated the scale with the material you want to be scaled.
