I am resigning from my teaching position; however, in the event that I return to teaching in the future, I would like to have a copy of all of my course materials from Schoology to have on my computer (since I imagine my account will be deleted once I resign). Is this possible? Please help!

Since you are using the Enterprise version of Schoology, the answer to your question depends on several permissions set by your system administrator. As such, the best way to accomplish this might be to save all of your materials to Resources and then download the collection as a Common Cartridge file.
